Stem lettuce is a member of the Asteraceae family of vegetables native to China.
Unlike the round type of lettuce we usually eat, this vegetable has a unique shape, and its thick stems are edible and have a crisp texture.
The leaves are removed and the thick skinned core of the stem is eaten raw in salads, salad dressings, or stir-fryed. The core is cut into thin strips and dried, eaten as a Chinese dish, boiled, or pickled.
